Peking Duck

I've been wanting to try my hand at this tricky dish for a while. Recently I went to Chicago to catch up with some work friends, and we went to Chinatown and had an excellent Peking duck. This was enough motivation for me to try this, so here it is! Next time I'd like to try with a fresh duck with its head still on for a more authentic experience.
